RECIPE: Quinoa-Lentil Pilaf

I'm someone who never thought I could eat Vegan and definitely didn't want to even think about trying something like lentils. But, the Ultimate Reset opened my eyes to SO may delicious options. I have NO intention of going vegan, but every once in a while, it's nice to give your body a break and... reset! 

This recipe is a great go-to lunch or dinner with lots of protein, good carbs, and just tastes delicious! As with all recipes from the Ultimate Reset, this serves ONE. SO I multiply it (MEAL PREP) so I can have it multiple times while on the reset and while NOT on the Reset, I can use it as a meal with my family



INGREDIENTS:
  • 1/12 tsp. extra virgin olive oil
  • 1/2 medium carrot, diced
  • 1/2 medium stalk celery, diced
  • 1/4 medium onion, diced
  • 1/4 medium red bell pepper, diced
  • 1/4 tsp ground smoked paprika
  • 1 dash group cumin
  • 1/4 tsp. ground turmeric
  • 3/4 cup cooked quinoa 
  • 1/4 cup cooked lentils 
  • 1 1/2 tsp. grated lemon peel
  • 1 1/2 tsp. fresh lemon juice
  • 2 tbsp finely chopped parsley

DIRECTIONS:
Heat oil in medium saucepan over medium-high heat.  Add carrot, celery, onion, bell pepper, paprika, cumin, and turmeric; cook, stirring frequently for 5 minutes or until tender.  

Add quinoa, lentils, lemon peel, lemon juice, and parsley to cooked vegetables; heat over medium heat for 2 to 3 minutes, or until heated through.  

Fluff with fork and serve.
