RECIPE: Layered Greek Hummus Dip

Layered Greek Hummus Dip


INGREDIENTS
8 oz. hummus
1 pint grape tomatoes, diced
1/2 cup diced cucumber
1 roasted red peppers, diced
1/3 cup crumbled feta cheese1/2 cup Kalamata olives, chopped
1/4 tsp paprika
Juice from 1/2 lemon, freshly squeezed (optional)

DIRECTIONS

1. In an 8x8 square serving dish, spread the hummus evenly on the bottom. 

2. Layer the tomatoes, cucumber, peppers on top and then sprinkle with feta cheese and olives.

3. Lastly, sprinkle top with paprika and lemon juice if desired. 

4. Serve with vegetables, pita chips or crackers

RECIPE: Zucchini Pizza Bites

These are the perfect clean eating option for an appetizer or Friday Pizza night, without going way off track with your diet and nutrition! Best part, even my son eats these up!


Zucchini Pizza Bites
INGREDIENTS:

1 zucchini, washed well and ends cut off
1/4 cup spaghetti sauce
1 cup shredded mozzarella



DIRECTIONS:

Preheat oven to 350 degrees.


Spray cooking spray (or lightly wipe olive oil on baking sheet).


Slice zucchini into 1/4" slices and place on baking sheet.
Spread sauce on top of slices.


Top with mozzarella cheese and any other pizza topping you'd like (my son loves a turkey pepperoni slice on his!).


Bake until cheese is melted and golden brown, remove, cool and Enjoy!
