RECIPE} Peanut butter Banana Pancakes

When my son began eating his solids, this was such a SIMPLE breakfast that I made almost daily and he DEVOURED. I enjoy them also, but I'll give a forewarning, they are best served right from the pan - don't try and warm them up.



Peanut butter Banana Pancakes - Gluten-Free and Dairy-Free!



2 over ripe bananas, mashed
2 eggs
1/2 cup almond butter or peanut butter
dash of cinnamon 

Peel and mash up the banana.


Add the eggs and almond or peanut butter and Whisk all ingredients together. 

Grease a griddle or pan on low-medium heat. If using cookie cutters, make sure they are metal and lay them flat.

Pour small amounts of the batter onto the pan. The sides will begin to bubble, like normal pancakes. Flip pancake as needed. 

Serve warm - with or without syrup!
