RECIPE} Grilled Garlic Tomatoes

I often post pictures of my meals to my Pretty Fit Mom facebook page. A friend asked for this recipe after she saw a picture, so here it is. This is a quick, delicious  side and you can add whatever seasonings you prefer. It's also great for the summer because it's fairly healthy and something you can toss onto the grill.



Garlic Grilled Tomatoes
Makes 2 servings

2 ripe red tomatoes
Fresh herbs (or dry)  to taste (I have done many different flavors to include thyme; salt and pepper; or my favorite oregano; pick something you like and that will go well with your main course)
2 cloves garlic, minced
1 TB extra-virgin olive oil
Grated Parmesan (to taste)

Cut the tomatoes in half, crosswise. If you choose to use salt and pepper, season it now. 

In a small frying pan add the crushed garlic, olive oil and fresh herbs, cook until golden and remove from the heat.

 Add in grated parmesan cheese. (My son and I are non-dairy, so I skip this for us but add it to my husbands - your choice!).

Place your tomato halves cut side down on and oiled grill until you get grill marks. Then flip them over with tongs and spoon the garlic cheese mixture on top and continue cooking.  

Serve immediately and enjoy!
